Then, you place the gravity press over the coffee and pour in a bit of hot water, just enough to cover the grounds by about half an inch, and wait for 30-40 seconds. This process is known as blooming, which gives the grounds some time to release carbon dioxide, making the resulting coffee more flavorful.
